Amazing Gluten-Free Vegetable Rice

This one-pot dinner came about when I wanted comfort food, but didn’t have the supplies for any of my usual go-to recipes.

I threw it together on intuition, and now it’s a regular player in my recipe rotation.

It makes enough for four, so there are always leftovers in our apartment for lunch or another dinner.

As a bonus: it’s gluten free, for anyone with an allergy or Celiac disease.

Servings: Enough for 4

Prep Time: 10 minutes

Cooking Time: About 40 minutes

Ingredients:

3 carrots, peeled & chopped
3 stalks of celery
1/2 onion, chopped (I prefer Vidalia, but yellow onions are good, too)
2 tbsp margarine
1 can chicken or equivalent in beef (sometimes I use 1 package of Hormel steak tips au jus, but they’re pricey)
1 cup uncooked Basmati or Jasmine rice
1 cup vegetable stock (or 1 cube)
1-1/2 cups chicken or beef stock, depending upon meat used (or 2 cubes)
Pepper, basil, oregano, and thyme to taste
Water (2 cups to start)

Directions:

To start, put a large wok or skillet on the stove, set on low-to-medium heat and add the butter. Once it has begun to melt, add the chopped vegetables and your spices.

Simmer these until the onions soften, then add the vegetable and meat stocks and bring to a boil.  Add another 2 cups of water, the rice, and the chicken, then cover.

Check on the skillet every few minutes and stir so that the rice does not stick to the bottom. If it looks as though the water has almost all been soaked up by the rice, and the rice is not fully cooked yet, add a little more.

After about 15 minutes, once the rice has cooked fully, spoon it out into bowls and enjoy!
